Spotlight on the Collaborators
The “Brewhalla Table: Harvest Dinner” is a collaboration between three key players in the Brewhalla complex, each bringing their own distinct style and history to the table:
Drekker Brewing Company
Drekker is the anchor and visionary behind the entire Brewhalla concept. Founded by four Fargo natives who began homebrewing in a garage, Drekker officially opened its doors in 2014 and quickly evolved into one of the region’s most prominent breweries.
Known for its experimental, fun-loving, and authentic brand, Drekker has gained national attention for its vast portfolio, particularly its unique “Smoothie Sours” and New England-style IPAs. The brewery itself is housed in a beautifully resurrected, former Northern Pacific railroad repair building dating back to 1880, giving the space a unique industrial-chic atmosphere. The name “Drekker” is inspired by the Old Norse words for “to drink” and the Viking dragon ship (drakkar), tying into the region’s Scandinavian heritage. Beyond the beer, Drekker is focused on community, regularly engaging in charitable efforts through its “Unpillage” program.
Unicorn Park Fine Foodery
Located within the lively Brewhalla food market, Unicorn Park Fine Foodery offers whimsical, fast-casual brewery fare with a focus on high-quality, locally sourced ingredients.
The restaurant’s menu is known for being “seriously good—but never too serious,” featuring creative takes on burgers and sandwiches like the NoDak Smash Burger and specialty items like their Lobster Roll. Unicorn Park’s commitment to using ingredients from local farmers and producers makes them a perfect partner for a harvest-themed event. They bring a fun, eclectic, and community-focused approach to market dining.
The Bird Woodfire Pizza
The Bird is the “saucy little sister” concept of the highly-regarded local restaurant Blackbird Woodfire, and is also located inside the Brewhalla food hall.
The Bird specializes in woodfired pizzas, which are “Prairie-made and hell-fired.” The foundation of their pizza is handmade dough crafted from North Dakota wheat and milled flour, which is then cooked in a massive, high-heat wood-fired oven. The menu offers both Brewhalla Specialty Pies and an option for guests to build their own. The Bird’s dedication to the craft of artisanal pizza and its use of local Dakota-grown ingredients make it a natural choice to contribute to a farm-to-table harvest dinner.
