This Valentine’s Day, join us at Icewind Brewing for an unforgettable evening of elevated food & beer. We are teaming up with Chef Paul from Duck Duck Goose Food Co. to host a Valentine’s Beer Pairing Dinner!
This 5-course dinner will be an extra special culinary experience, with Chef Paul’s signature dishes carefully paired with some of Icewind’s finest craft beers.. Along with the exceptional food & drink, Chef Paul & Head Brewer Tyler will share insights & stories to enhance your dining experience.
This event will take place at Icewind Brewing in Mapleton (just a few miles west of Fargo). Space is limited, so make your plans to reserve your spots for this unique dining event!

About the food:
Chef Paul Nimens grew up in the Crookston / East Grand Forks, MN area. He and his wife, Nicole, ventured out the west coast for Paul to attend culinary school, where he spent a decade working in various kitchens (including a Michelan Star restaurant) and gaining respect in the Oregon/Washington food world, even earning a James Beard nomination for his culinary expertise.
When the Nimen family grew, they decided to move back to their roots and came back to the Fargo area in 2021. Chef Paul worked in several local restaurants, such as 701 Eateries, Rosewild & Spaghetti Western, before deciding to pursue his dream of having his own food truck. The result was Duck Duck Goose, a family run food truck which formed in 2024 and serves up delicious comforting classics with a twist!
About the beer:
Homebrewers, Rick Brandvold and Tyler Mangin met through the local homebrew club and worked together at Flatland Brewery in West Fargo, ND. Both were competitive , award-winning homebrewers who loved board games.
They went on to open Icewind Brewing in 2020 during the peak COVID and have been a fixture in Mapleton, ND ever since. They take pride in a diverse offering of classic and experimental beer styles and hard seltzer… and an impressive library of board games in the taproom.
